I’ve been craving fish for the whole week. Not the sushi kind (I live in an area where there’s a lot of good authentic Japanese restaurants). Nor salmon. Or tuna… I want the meaty yet flaky and clean-tasting kind. A proper white fish. And I found some good and reasonably priced wild halibut fillets in our local Costco.
Like the way I hold my grandma’s memories so dearly (food was her love language and I was so fortunate to be raised and nourished by her), summer produce has a very special place in my heart —both for their taste and the warmth they bring. Tomatoes and basil are still abundant in our local grocery stores (and it still definitely feels likes summer too) so I went ahead and made a dish that has the same flavor profile as my grandma’s fish in tomato sauce.
Ingredients:
-2 lbs halibut (or any meaty white fish) fillets
-1.5 lbs cherry tomatoes, halved
-2 cloves garlic, minced
-2 tablespoons basil, chopped
-3 tablespoons olive oil
-salt and pepper to taste
Instructions:
I seasoned the fish with salt and pepper then pan seared it (medium-high heat for 3 minutes on one side then turn heat to medium and sear the other side for around 3 minutes too).
Using the same pan (fish transferred to a plate), I then sautéed a handful of cherry tomatoes and some garlic until the tomatoes burst and release their juices, then seasoned it with salt and pepper, and mixed some chopped basil (my grandma didn’t use basil in her dish but I think tomatoes will always work with basil ).
Last step was to spoon the sauce over the fish and lunch was ready in less than 30 minutes!
