Another Take on the Caesar Salad

I found some really nice artisan romaine hearts in our local Costco (it was also the first time I’ve encountered one) so I thought I’d try it out. Also perfect timing since the kids have been into caesar salad lately.

One thing about these artisan romaine hearts is that they’re really pretty I didn’t want to cut them into smaller pieces. And I ended up presenting them like this —

It turned out quite fun to eat. The kids liked the idea that they can eat it like pizza or potato chips, and can actually customize the amount of dressing and cheese and croutons for each bite. I love that this presentation opened up their mind that they’d like it for a snack too. 🙂

Caesar Dressing Ingredients:

  • 3 cloves garlic, minced
  • 3 anchovy fillets, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise
  • ½ cup freshly grated Parmigiano Reggiano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Directions:

It is really pretty straight forward — put the garlic, anchovies, lemon juice, Dijon mustard and Worcestershire sauce together in a bowl, mix well. Then add the mayo, cheese, salt and pepper and mix until combined. Adjust seasoning to taste.

To assemble, spread the dressing to clean (washed and patted dry) romaine leaves. Sprinkle shaved Parmigiano and crushed croutons and serve.
